The farmers of the El Jilguero cooperative listen to the local birds sing as they harvest and mill their coffees together. In fact, the name El Jilguero is derived from the nature preserve that borders many of these farms in La Paz, Honduras. Farmers that care about the environment take very good care of their own plants, and as a result we get to enjoy some exquisite coffees that perfectly reflect the vibrant landscape! El Jilguero brews an incredibly dynamic cup. An earthy note of bell pepper leads off the profile, giving way to a full-bodied chocolate flavor that provides just the right amount of weight. There's a hint of citrus at play as well, enough to add some definition to this smooth and savory brew. This coffee has a real strong presence, but maintains a complexity of flavors, making it the perfect additon to our Classic Profile line-up. We hope you enjoy it!

Very straightforward
The flavor was as described. Satisfying peppery flavor with a pleasant chocolate bitterness. My first classic bag, still trying to decide if I'm a fan of the classic line.

Decent
An ok cup of coffee. Fortunately not too citrus/sour. Flavor mild as are apparently most if not all of Moustache Coffee Club's blends. We prefer darker roasts.
