This coffee was produced by the Cooperativa Cafetalera Sanmarqueña - known locally as Cocasam for short. The cooperative has 160 active members (61 women and 99 men) that farm primarily in the La Botija mountain range. La Botija is one of the largest nature preserves in southern Honduras with dense forests providing ample shade for the coffee plants and keeping temperatures down. Since the surrounding forest is protected, farmers in Cocasam cannot expand the size of their farms so they focus on improving crop yields via organic production practices and increasing cup quality via rigorous processing to command higher prices for their beans. These efforts and the natural benefits of the forest preserve result in truly exceptional coffees - which Cocasam has been producing since 1988.

We're getting a serious chocolatey flavor out of these beans, and a touch of citrus to boot. The body on this cup is prominent and creamy as well, making for an extra-smooth brew that's worth savoring. A lot of care and consideration went into producing these beans, and we're excited for you to give them a taste!
