These tasty Caturra and Castillo beans were grown by Maria Damaris Medina on her farm Finca Santa Elena, which is located in the Pital municipality of Huila Department, Colombia. Huila is famous in the specialty coffee world not only for its high-quality coffees - but because of its near-constant production. The geography and weather in the area mean that coffee grows extremely well regardless of season, leading to almost year-round harvests. It's a fairly wet place so farmers face some challenges drying their coffees, but Ms. Medina utilizes parabolic drying beds to ensure that her coffees dry slowly and evenly.
This lot from Finca Santa Elena presents a lovely profile that's heavy on sweetness and smoothness. We're tasting flavors similar to an old-timey soda fountain: notes of cola, brown sugar, and vanilla.
