Cachoeirinha is a farm that sits within the Mantiqueira Mountains in Brazil run by Cleber Thiago Silva and his brother. He is doing a lot of interesting things on his farm, and this year Nordic Approach has bought all of his production - that's how good his coffees are! Fabio Andriel and Cleber Tiago Silva are brothers, and along with their wives, they run the Cachoeirinha together. They both grew up on the farm from infancy, when their bamboo swings were set up amongst the coffee trees. Their grandfather taught them how to make a living with coffee, but more importantly how to love coffee. It is not just a job for them, they do this with passion. After the brothers took over the farm in 2008, they began to work on producing specialty coffee. They are 3rd generation coffee farmers, with kids of their own that make it 4th generation involvement. This is an anaerobic natural coffee, which means that the cherries were first fermented in an airless environment for 72 hours before being dried whole in an mechanical dryer. Using a mechanical dryer is especially helpful with unique fermentations, since the machinery allows for much more controlled and consistent drying times and temperatures.

When you first try this coffee you’ll pick up on funky ripe fruits up front, with spices and nuts underneath. This natural coffee is an experience, with so much to offer in terms of flavor. Not too sweet; we think it will appeal to everyone. A Brazillian coffee we revisit often- we think it will be a crowd favorite!

Funky Means Great

I smelled Strawberry when grinding. First few sips were a mix of nutty and strawberry. Very unique smell and taste relative to others. I’m a boring drinker - fine grind made in a drip coffee maker using 1:1 ratio.

Fruity and funky

This was my first experience with an anaerobic coffee, but I enjoy fruity coffees so I thought I’d give it a try. After the first sip, I wasn’t sure this was for me as I mostly got the funkiness. After that I could really taste a lot more of the fruit. It’s a bright, acidic fruit without the coffee seeming acidic. Very pleasant, and I’d love to be able to drink this a lot more often. The funk adds an interesting dimension: not as funky as many Belgian beers, but definitely there.

Glad you enjoyed the Anaerobic! They're divisive sort of like naturals, but I think this one strikes a great balance and makes for an interesting cup. :)

Funky Dunky

Big departure from what I'm used to. While I appreciate the fruitiness as a concept I think (subjectively) it might be a little forward for me; still very happy with the quality and I love tasting outside of my comfort zone.

One of the best

Love this coffee. The perfect amount of fruit but not too sweet. Taste the berry, as well as the chocolate elements. A really smooth, delicious cup of coffee! Will get again if possible
