Juicy Grape — Colombia, Huila/Tolima/Caldas
This one is a little different. Forest Coffee sources ripe cherries from farming families across Huila, Tolima, and Caldas, then transports them to El Vergel Estate in Tolima for processing. The result is a coffee that draws on Colombia's diverse terroirs while showcasing some genuinely creative fermentation work.
The process is layered: hand-sorted cherries go through a 24-hour pre-fermentation, then ferment in cherry before being depulped and co-fermented anaerobically for five days with their mucilage, yeast, and grape additions. It's a honey process at its core, but pushed into bold, fruit-forward territory. In the cup, expect juicy grape and red grape up front, with a warm, sweet finish of caramel, brown sugar, and brown spice.
