Banko Taratu — Ethiopia, Yirgacheffe
From the highlands of Gedeb Banko Taratu, one of Ethiopia's highest coffee-growing regions, comes this exceptional lot produced by over 500 family-owned farms working in close collaboration.
This coffee undergoes a meticulous double fermentation process, with two distinct stages lasting up to 96 hours total, followed by 12-15 days of careful drying on raised beds. This specialized processing helps develop a complex cup with notes of white peach, delicate honey sweetness, and bright kiwi.
The Banko Taratu community maintains deep coffee-growing traditions passed down through generations, with harvesting being a communal effort where families come together to carefully hand-select only the ripest cherries. This commitment to quality and community makes this coffee truly special.
