Ceiba Honey — Colombia, Caldas
This exceptional honey-processed coffee comes from the Reforest Project in Manzanares, Caldas, where sustainability meets exceptional cup quality. The coffee cherries are processed at the renowned El Vergel Estate, known for their innovative processing methods.
The complex processing includes a 36-hour anaerobic pre-fermentation followed by 120 hours of controlled fermentation in hermetic tanks. This meticulous approach yields a cup with pronounced notes of brown sugar sweetness, bright lemon acidity, and delicate raspberry undertones.
Part of a larger initiative to plant 50,000 native trees in northern Tolima and South Caldas, this coffee represents both exceptional quality and environmental stewardship. Each sip supports climate resilience in Colombian coffee communities.
