Chiroso Carmen — Colombia, Antioquia

From the Penderisco River valley in Urrao, Antioquia, this Chiroso comes from Carmen Montoya's Bellavista farm — one of the founding producers of the Chiroso de San Carlos Project, a collective dedicated to unlocking the full potential of this distinctive elongated-bean variety.

The processing here is meticulous. After hand-sorting at peak ripeness, the cherries go through a 12-hour aerobic pre-fermentation, then 36 hours of anaerobic fermentation in sealed stainless steel tanks before being washed and sun-dried on patios for up to 16 days. The result is a beautifully structured cup with chocolate and caramel at its core, brightened by blackberry and a gentle sweetness.

We've loved exploring Colombia's diversity through coffees like our San Carlos and La Esmeralda lots, and this one fits right into that tradition — a small-farm, family-labor story with serious cup quality to back it up.
