This delicious coffee comes to us from Elver Novoa's San Luis farm, up in the hills above the town of Guadalupe in Southeastern Huila. We talk about Huila a lot, and get a decent number of coffees from there, because it really is a unique place for growing excellent coffee. A big part of this is due to the large-scale geography of the region, with much of the department framed in by the Eastern and Central ranges of the Andes. This provides not only ample hillsides for coffees to grow at high-altitude (over 180,000 hectares of coffee are planted in Huila alone) but it also helps encourage rainfall and temperature variation that lead to successful coffee growth.
It's said that you can find a coffee in Huila for any sort of flavor preference, and we think this bean is a great all-rounder: a smooth, robust chocolate note gives the cup some grounding, while the more fruity and acidic tones of cherry and lime add some brightness and complexity to the cup. It strikes a very nice balance between sweet, acidic, and robust - which makes a cup of coffee that you'll drink maybe a bit faster than you realize! This one's been a two-cup minimum at the new MCC roastery - and we hope you get as much enjoyment out of it as we have!
