El Paseo, Colombia, Nariño

Huver Castillo is a third-generation coffee grower from Buesaco, Nariño, who spent years teaching math before returning full-time to his family's farm. El Paseo has been in the Castillo family for over 20 years, sitting on the slopes above the Buesaco valley along the Suma Paz trail, shaded by native trees at 1,750 to 1,950 meters.

The process here is anything but ordinary. Ripe Caturra cherries go through a 36-hour pre-fermentation, a sea salt float, and then a 6-day anaerobic fermentation in stainless steel tanks with added enzymes specifically chosen to coax out a floral profile. The result is a coffee with real intention behind every step.

In the cup, expect bright orange and citrus up front, with a soft coconut sweetness and a lingering floral, lemongrass finish. It's the kind of coffee that keeps surprising you as it cools.
