From the San Pedro farm in San Juan de la China, Milton Monroy has spent years perfecting his craft with the Gesha variety — a grape he and his father fell so deeply in love with that they dedicated 25% of their farm to it. That commitment has earned San Pedro consistent recognition as a finalist in the Colombian Cup of Excellence.
This lot undergoes an innovative natural anaerobic process: 84 hours of fermentation in sealed 60kg tanks (shaken every 12 hours for even flavor development), followed by a careful mixed-drying phase of up to 32 days on canopies. The result is a coffee of remarkable complexity — strawberry and papaya sweetness woven through a delicate tea rose floral character, with a creamy, lingering finish.
